Cake Heaven

It has been a little while since i shared a recipe, so today that is just what i am going to do.

Ice Cream Cake

This is a recipe from my childhood. A food memory...the kind that takes me straight back to the afterglow in the church basement(this recipe was always made by the pastors wife).


This is perfect as a birthday cake or just for a fun get together with friends

Ice Cream Cake

2 boxes Little Debbie Swiss Rolls
2, half gallon containers Ice cream....whatever flavors you like
1 pkg. Oreo cookies
1/2 pint Heavy Cream
3 T Sugar

Take your ice cream out to soften. Cut your swiss rolls in half and place them around the outside of a springform pan, with the white icing facing out. Crush that package of oreo's...sprinkle about 1/3 of the crumbs on the bottom of the pan. Press down firmly. Spread in 1 of the ice cream flavors(i did cookies and cream)...smooth and press in with a offside spatula or a spoon. Sprinkle another third of the crumbs on top, press in lightly.....move on to the next flavor ice cream and smooth as before. Now top with the last of the oreo crumbs and press them in lightly. Whip the cream and sugar. pipe it onto the top of the cake with a piping bag and star tip. OR use ready whip in a can, in a pinch. Freeze for a few hours or overnight. Place in fridge 30 minutes before serving. Remove ring of pan and slice with large knife(have a cup of hot water near and stick the knife in it....wipe it clean before using. this will help it cut through the cake more smoothly.) Another good flavor combo is chocolate chip and coffee ice cream.

I forgot about the swiss rolls! Maybe I'll try that next time the kids ask for ice cream cake.

The original recipe called for Yodels but Swiss Rolls are a lot less expensive.

i was squinting at that cake trying to figure out it's border- ahha! Little Debbie cake rolls!!!! My mother, god bless her well meaning heart, would pack those (or the jelly ones) in little good luck snack bags she'd make for me when I ran cross country and track. It was like my pre race fuel and while I am baffled now to think about how I was able to eat those and then run, not only did I do that, but I won most of my races. Weird but true fact ;)

I think I will like them in a version of a cake- especially if I don't need to race right after!

Oh looks yummy! My husband would go crazy for this - Oreos AND Little Debbie?! Might have to make this for his 30th birthday next week!
